I got a question for y’all…Should I bring back Tasty Thursday?

See, I’m showing Optimism

I know I don’t talk about my siblings much on here, but I think that’s mainly because they are still young and I don’t live all that close to them.

Just to clarify, I have 3. Kayla (18), Justin (15), and Derek (9). And yes, we were spaced out a good bit. And yes, I about lost it when my mom told me at 16 that she was having another child.

Anyhoo, back to the story.

My lil’ sister called to tell me Christmas Eve that she was engaged. While some would say that’s pretty young, I can’t judge. I was engaged at 17 and got married at 18, and I’ve now been HAPPILY married for almost 7 years. To each his own…it worked out great for me.

Two days after she called to say she was engaged, she called to tell me that she was “late” and was about to take a test. About 5 minutes later she text me a picture of the test. The positive test.

My 18 yr. old sister is getting married and having a baby. The little sister I used to babysit. The little sister that used to drive me insane by always getting in my things.

The good news is she and Jesse have known each other since probably Kindergarten. They even “dated” when they were 12 or so. So they aren’t strangers at all. And unlike most guys, he’s excited.

The wedding has been moved from June to January 24th. Yep, this January 24th. To say that this is going to hard to put together in such a short time is an understatement. But, I have faith that they will get it done. Both our mom and his are working hard at it, and things seem to be running smoothly.

The reason for this story is because I need help.

My sister can’t cook. AT ALL!

So, as a wedding present, I want to put together a cookbook for her. Not just random recipes, but recipes for people who are just starting out. Recipes that I think she can tackle. This is where you come in.

I need you to share with me some 30 minute or less/short ingredient list recipes. You can either email them to me at crimsontidegurl at gmail dot com OR come back this coming Thursday and share them with me during Tasty Thursday.

Menu Plan Monday–August 5th


So, once again we were away for the weekend. That means we’ve been gone 3 out of the last 4. I’m pooped. I’m ready for school to be in and life to resume back to a semi-state of normalcy.

Anywho, let’s talk food.

Monday–Breakfast (Ham, Eggs, Biscuits and Pancakes)
Tuesday–Pork Tenderloin, Mashed Potatoes, Mac N Cheese, and rolls
Wednesday–Hamburgers and Chips

Paula Deen Celebrates Cookbook!


Okay, so one of the 7, Yes SEVEN, gifts I won at The Dog Days of Summer Giveaway was the Paula Deen Celebrates Cookbook from Melanie of This Ain’t New York. Thanks to both of you!

Y’all, if you know anything about me, you know that I absolutely ADORE Paula Deen. In fact, I call her my adopted Grandmother. So, you can imagine how ecstatic I was to get this new cookbook of hers. She shares her favorite recipes for all of the Holidays. It’s wonderful!

So, to give back and share the love, I’m going to share some of my favorite recipes out of the cookbook, saving my favorite for tonight when I post my Tasty Thursday recipe.

Paula Deen’s Crème de Menthe Brownies


Ingredients

• 4 oz. (4 squares) unsweetened baking chocolate
• 1 cup (2 sticks) unsalted butter
• 4 large eggs
• 2 cups granulated sugar
• 1/2 tsp. salt
• 1 tsp. vanilla extract
• 1 cup flour

Filling
• 1/2 cup (1 stick) unsalted butter, softened
• 2 cups sifted confectioners’ sugar
• 4 Tbsp. green crème de menthe (or use green food coloring plus a dash of peppermint extract)

Icing
• 6 oz. (1 cup) semisweet chocolate chips
• 6 Tbsp. (3/4 stick) unsalted butter

1. Preheat oven to 350ºF. Mist a 9” x 13” baking pan with cooking spray.

2. Prepare brownies: In double boiler, melt baking chocolate and 1 cup butter over simmering water. Cool slightly.

3. In medium mixing bowl, beat eggs with a whisk until blended, then add the 2 cups granulated sugar and continue whisking until mixture is light and fluffy. Add cooled chocolate mixture, salt, vanilla and flour. Keep whisking until thoroughly blended. Pour batter into prepared pan and bake 25 minutes. Remove from oven and leave brownies to cool in pan.

4. Make filling: Using an electric mixer on medium speed, beat the 1/2 cup butter and confec­tioners’ sugar together until well blended. Stir in the crème de menthe and blend well. Spread over cooled brownies. Refrigerate in original baking pan until filling is firm.

5. Make icing: Melt the chocolate chips and 6 Tbsp. butter in the top of a double boiler, stirring until smooth. (You can do this in the microwave — just monitor closely and stir a few times.) Pour the warm glaze over the filling and tilt pan to distribute the icing evenly. Refrigerate until chocolate hardens.

6. To cut, allow brownies to come to room temperature in the pan so chocolate doesn’t crack.

Macho Nachos

1 can refried beans
1 large bag white corn tortilla chips
1 medium onion, chopped
1 cup shredded pepper jack
1 jalapeno, sliced crosswise, plus extra for garnish
1 can chili, or your favorite chili recipe
1 cup shredded Cheddar
1 cup sour cream
1 cup green onion, chopped
1 tomato, diced

Have all the prepped ingredients easily accessible to assemble nachos.
Preheat the oven to 350 degrees F.

In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

Creamy Macaroni and Cheese

2 cups elbows (a little more than an 8oz box)
1 10.75oz. can cheddar cheese soup
4 tbsp. (1/2 stick) butter cut into pieces
2 1/2 cups (10 oz) sharp cheddar cheese, grated
3 eggs beaten
1/2 cup sour cream
1/2 tsp salt
1 cup whole milk
1/2 tsp dry mustard
1/2 tsp black pepper

Preheat the oven to 350. Spray a 13×9 inch dish with vegetable oil cooking spray.
Boil the Macaroni in a 2-qt. saucepan in plenty of water until tender, about 7 minutes. Drain. Return it to pan and add 2 cups of the cheese. Stil until cheese melts while the macaroni is still hot. Add the eggs, sour cream, soup, butter, salt, milk, mustard, and pepper then stir well.
Pour the macaroni into the prepared dish. Smooth the top and sprinkle the remaining 1/2 cup of cheese on top. Bake for 40 minutes, until brown and bubbly.

Hummingbird Cake

Ingredients:
3 Cups self-rising flour
2 Cups granulated sugar
3/4 Cup vegetable oil
1/2 cup chopped pecans
2 very ripe large bananas – mashed
1 can (8oz) crushed pineapple
1 tsp vanilla extract
1 tsp ground cinnamon
4 large eggs, beaten

ICING RECIPE :
1 pound box confectioners’ sugar
8oz package cream cheese- room temp
6 tbs butter, softened
1 tsp vanilla extract
1 tbs milk, more if needed
1/2 cup finely chopped pecans

Preheat oven to 325*

Grease and flour three 8 inch round cake pans. In a large bowl, combine flour, sugar, oil, 1/2 cup pecans, bananas, pineapple, vanilla, cinnamon and beaten eggs. Stir well until smooth.

Pour batter into the 3 pans and bake for 26-28 min, or until tops spring back. Let cool in pans for 10 min. Then cool on racks completely.

Make the icing by mixing the sugar, cream cheese, butter, vanilla and 1 tbs milk in a large bowl with an electric mixer. Mix until smooth. If needed add more milk, 1 tsp at a time for proper spreading consistency. Ice between each layer and on the top and sides. Sprinkle the top with pecans. Keep refrigerated.

A little of this and that!

So today, starts anew. I’ve decided that since I’ve been feeling as if a lot of my “friends” aren’t really true friends, I’m cleaning out my proverbial closet. I’m done with “fair weather” friends. Those who only want to come around when it’s convenient or when they need something. I deserve better than that and I’ll settle for no less. I’m not in High School and I don’t have time for petty nonsense. I could go on and on about this, but I’ll spare you all.

Dropped off Mark’s “specimen” yesterday. He’s kind of put it off, so it’s been almost 5 months since the Vasectomy. If those things are still swimming, we’ve got bigger problems, LOL.

This morning I was sitting here on the bed, checking emails, eating Honey Combs a nutritional low-fat breakfast and drinking a cold diet coke on ice, when Reagan came over to my cup and proceeded to pour Yoo-hoo in my drink. I had just poured it. It was a full glass. Boy does she know how to make mommy angry, LOL.

I’m now on the 2nd Harry Potter book and I’ve watched the first movie. Who knew you could get so sucked into something. Mark liked the movies and Zach did as well. Before you know we’ll all be Potter fans.

Yes, another giveaway for the kids. Well, I guess that this can be for the moms too, since good movies always buy us some time while the kids are watching them. Two of Zach’s favorite movies are Fox and the Hound and Fox and the Hound 2. He L-O-V-E-S them, especially 2. It’s chalked FULL of music.

He and Reagan were given these as a Christmas present from their Uncle. Shortly after, I recieved them from the Disney DVD club. Since they were paid for, I figured I’d give them as a gift and I have yet to do so. Then Shannon announced this giveaway carnival and I thought it would be a great opportunity to give them to a child who will enjoy them.
